Warm Potato Salad with Crispy Bacon

An old-fashioned warm potato salad recipe, with a distinctive sweet and sour bite. This salad goes great with barbecued burgers on a hot, summer night and is a welcome change from regular old potato salad with mayonnaise.

Warm Potato Salad with Crispy Bacon

  • 6 slices bacon, sliced into 1/4 strips
  • 4 potatoes, peeled and diced
  • 1 small onion, minced
  • 2 spring onions, chopped
  • 1/3 cup cider vinegar
  • 2 tablespoons water
  • 1 teaspoon Dijon mustard
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1/4 teaspoon pepper

Microwave diced potatoes with a bowl with bit of water for 4-5 minutes on high, stopping the oven to stir the potatoes 2-3 times.

While the potatoes are cooking, saute bacon for 5-6 minute in a large frying pan until crispy but still tender.

Add the white and green onions to the bacon and saute together for 3-4 minutes, stirring frequently.  Add the potatoes when they are finished in the microwave and saute everything together for 7-8 minutes, stirring often.

In a measuring cup, combine cider vinegar, water, sugar, salt and pepper. Add this sauce to the potatoes, cover pan, and cook for another 5-10 minutes, until potatoes are cooked.
