Tire sur la neige (taffy in the snow) is an old-fashioned Quebec treat that’s made in late winter / early spring when there’s still snow on the ground, but the sap in the maple trees has started to run.
Making tire is fun and beyond easy to make. You just pour a can of maple syrup into a bowl and microwave it for 20 minutes. End of recipe.
But beware! Tire sur la neiges comes out differently at home than at the cabane à sucre. Don’t put too much in your mouth at once. It’s stickier and harder than the one you get at the cabane à sucre, and really sticks to your teeth.
Tire Sur la Neige in the Microwave
- 1 can 100% pure Quebec maple syrup
Pour the maple syrup into a large bowl, then butter the inside rim of the bowl, about an inch into the bowl, to prevent the syrup from overflowing.
Microwave syrup in 5-minute intervals until 240°F, or a drop of syrup in a glass of ice-cold water immediately freezes into a ball.
Cooking time take up to 20 minutes, depending on the strength of your microwave.
To serve, pour a small amount of syrup on the snow, then use a spoon or popsicle stick to roll it up and eat.
